The problem is not that clean food production is scientifically difficult. The problem is that the business model that delivers it at scale — at a price ordinary people can afford, through channels they actually use — does not yet fully exist.
The current market for clean food is a premium market. It serves the segment of the population with the disposable income to pay a significant markup for the cleaner option.
